COOKBOOK RECIPES (order cookbook)

Chocolate Mochi
2 cups mochiko (rice flour)
2 cups white sugar
1 tbsp. baking soda
1/2 cup margarine, melted
1 cup semi-sweet chocolate chips
2 cans (12 oz.) evaporated milk
2 tsp. vanilla extract
2 eggs, beaten

Sift dry ingredients: mochiko, sugar, and baking soda in a large bowl. Melt margarine and chocolate chips together and combine with evaporated milk, vanilla extract and eggs. Mix well and stir into dry ingredients until it becomes a smooth batter. Pour into greased 9 x 13 inch baking pan. Cool, then serve. Do not refrigerate. Cut mochi with plastic knife.
